Ingredients:
For the meat sauce:
• 1 lb ground beef
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 can (28 oz) diced tomatoes

• Salt and pepper to taste
For the eggplant:
• 2 large eggplants
• Olive oil

• 4 tbsp butter
• 4 tbsp flour
• 2 cups milk
• 1/4 tsp nutmeg
• 1/4 cup grated Parmesan cheese

Instructions:
Preheat oven to 375°F.
Make the meat sauce: Cook the ground beef, onion, and garlic in a large skillet over medium-high heat until the meat is browned and the onion is softened. Add the diced tomatoes, tomato paste, cinnamon, oregano, salt, and pepper. Simmer for 10 minutes.
Prepare the eggplant: Slice the eggplants into 1/2-inch rounds. Brush both sides with olive oil and place on a baking sheet. Bake for 20 minutes, flipping halfway through.
