Ingredients:
600g pork tenderloin, cut into medallions
2 large apples (e.g., Granny Smith), sliced
100g walnuts, roughly chopped
2 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon olive oil
1 onion, finely chopped
1/2 cup chicken broth
Salt and pepper to taste
Instructions:
In a pan, sauté the onion in olive oil until softened. Add the pork and sear on all sides until browned. Add the apples and walnuts and cook for 2-3 minutes. Pour in the balsamic vinegar and honey, stir well, and simmer for 5 minutes. Add the chicken broth, salt, and pepper. Simmer for another 15-20 minutes, or until the pork is tender and the sauce has thickened. Serve hot, with mashed potatoes or rice.
For extra flavor you can adding thyme or rosemary.
